Graduated in Hotel and Gastronomic Business Administration at Institute CENCAP in Buenos Aires. He spent more than ten years venturing into Spanish cuisine, where he learned to combine local flavors with avant-garde techniques.
The Argentine chef, passed by renowned restaurants in Europe before coming to live in Brazil. He left ama lur, in Ibiza, where he managed the kitchen for five years to open Rocka in 2009, presenting modern Mediterranean cuisine with Brazilian products.
In 2012 he met chef Mauro Colagreco and was invited to train at his Mirazur restaurant (3 Michelin stars), considered today the number 1 of the best restaurants in the world.
Also in Búzios, Gustavo has his artisanal charcuterie factory, La Choriceria.


Gustavo started to study at Institute CENCAP, located in Buenos Aires, the course of Administration of Hotel and Gastronomic Companies.


After finishing university, Gustavo traveled to Europe to experience and learn about gastronomic culture for the next 8 years.
